			<content:encoded><![CDATA[<p>Recently, I received a new cookbook, &#8220;<a href="http://www.amazon.ca/healthy-gluten-free-life-delicious-dairy-free/dp/1936608715">The Healthy Gluten-Free Life</a>&#8221; in the mail from author, Tammy Credicott. Upon opening the package, I was pleasantly surprised by the beautiful cover and lovely colorful pictures of her family and many appealing foods. </p>
<p>As I read through the book, I was very pleased to see that Tammy has focused on healthy recipes to help promote healing in individuals with a gluten intolerance. Since many people with related intestinal damage can have nutritional deficiencies, it is important to include healthy flours and other nutritious ingredients in any gluten-free diet. Tammy has definitely included healthy options in her recipes.</p>
<p>As well as great recipes, Tammy also includes flour substitutions, discusses dairy and egg substitutes, cross contamination issues, tips for a happier kitchen, and has also included many other tips to help with a healthy gluten-free lifestyle adjustment. Thank you Tammy for this lovely contribution to the gluten-free community!</p>

			<content:encoded><![CDATA[<p>The Canadian Celiac Association has started a blog. The latest post, &quot;<a href="http://www.celiac.ca/blog/index.php/2011/09/20/ontario-blood-testing-and-the-election/">Ontario Blood Testing and the Election</a>&quot;. This blog post discusses issues around the lack of healthcare coverage for celiac blood tests in Ontario, Canada. It further discusses how an upcoming election may lead to change and increased diagnosis.</p>
<p>I live in B.C., but most of my relatives live in Ontario. It certainly was a challenge getting my relatives tested, due to this lack of coverage. This roadblock could easily lead to delayed diagnosis for many people who live there. As we know, delayed diagnosis can lead to many complications. As a preventative measure, hopefully, the government of Ontario will follow the other provinces and provide coverage for celiac testing. </p>
<p>I would like to see it taken a step further with coverage for all the tests used to diagnose the various types of gluten intolerance:)</p>

<h2>Ingredients:</h2>
<p>1 1/2 large, ripe bananas, mashed    <br />1 teaspoon gluten-free vanilla extract     <br />2 tablespoons coconut oil, (warm) or olive oil     <br />1 cup designated, pure, uncontaminated, gluten-free rolled oats     <br />1/3 cup ground almonds     <br />3 tablespoons finely shredded unsweetened coconut     <br />1/2 teaspoon cinnamon     <br />1/4 teaspoon salt     <br />1/2 teaspoon baking powder     <br />1/3 cup dark chocolate chips (mini)     <br /><strong></strong></p>
<p><strong>DIRECTIONS</strong> : Preheat oven to 350 degrees F. In a large bowl, mash the bananas and then mash in the vanilla and coconut oil, set aside.&#160; In another bowl, whisk together the oats, almonds, shredded coconut, cinnamon, salt, chocolate and baking powder.&#160;&#160; Add the dry ingredients to the wet ingredients and stir until combined.&#160;&#160; The dough is very loose so you can either use your hands to mold into small balls (and flatten with fork) or pat all dough down on your cookie sheet and cut into squares after baking.&#160;&#160; Bake for 14 &#8211; 15 minutes until bottoms are golden.&#160; Let stand for about 20 minutes to set.     <br />Makes approximately 17 bite size cookies or squares </p>

If you choose to eat pure uncontaminated oats, consideration needs to be given to</strong> </em></strong><strong><em>when to introduce oats, the recommended limit for amount consumed per day and follow-up care with your doctor to monitor for a reaction. As well, oats need to be pure and cannot be contaminated by gluten. All of this information is included in my book.</em></strong></p>
